Yummy Pumkin Seed Recipe!

One of my favorite things about this time of the year are baked pumpkin seeds!  My kids love them too! 
 
What you will need:
Olive oil
Seasoning Salt
Salt
Garlic Powder
 
 
 
 
Directions:
First wash the seeds off!  After washing the pumpkin seeds you are going to let them soak in salt water for about 24 hours!  After the 24 hours you will need to strain the seeds.

 
You need to dry the seeds off as much as possible.  They will still be a little wet.  Preheat your oven to 320 degrees.  Put the pumpkin seed on a baking sheet and sprinkle with olive oil (I use extra virgin) then sprinkle with garlic powder and seasoning salt.  Stir them around on the baking sheet.  Throw them in the oven for about 40 minutes.  Keep an eye on them because oven temperatures are not all the same!  The pumpkin seed are done when the start turning brown.  I stir my seeds 1 time about 20 minutes into the baking time!

Yummy Cucumber and Tomato Salad

Cucumber and Tomato Salad
Ingredients: 
2 medium tomatoes, sliced and quartered
1 large cucumber, peeled and sliced
4 green onions, chopped
1 tablespoon sugar
1 teaspoon salt
1/4 teaspoon pepper
1/3 cup cider vinegar
1 cup water

Directions:
In a medium bowl combine the tomatoes, cucumber and green onions.  In a small bowl combine the sugar, salt and pepper.  Whisk in the vinegar and water.  Whisk until the sugar and salt dissolve   Pour over vegetables and toss to coat. Cover and refrigerate for 4 hours or overnight.  Serve with a slotted spoon.
Thought this would be a great time to post this recipe since the weather is starting to get nice in most places! My kids and I love this as a snack or side dish on a nice day!  This recipe is also great for taking to a BBQ or get together!

Crescent Pizza-YUM!

Crescent Pizza
Crescent Pizza

What you need:
1 can (8 crescents) regular crescents
1 can (8 crescents) Garlic crescents *new*
Pizza Sauce
Turkey Pepperoni
Mozzarella Cheese
*Any other toppings you want*

Directions:
Get a cookie sheet.  You need to roll one regular crescent roll out flat.   Add a small amount of pizza sauce on it then put a light amount of cheese on it and you pepperoni and any other toppings.  Next take a garlic crescent roll and lay it flat.  Add a little pizza sauce to it and then lay it on top of the regular crescent roll with the pizza sauce facing the toppings!  Bake according to the package!

Bubble Pizza Recipe!

Bubble Pizza!
Ingredients: 
*2 or 3 cans of biscuits (2 of the large cans or 3 of the small cans)
*Pizza Sauce (Desired amount)
*Mozzarella Cheese (Desired amount)
*Pepperoni (Optional)
*Onions (Optional)
*Ham (Optional)
*Mushrooms (Optional)
*Green Pepper (Optional)
*Black Olives (Optional)
*Any other toppings you want (Optional)
Other things you need:
*Oven
*Knife
*Cutting board
*9x13 Pan
*Tablespoon
*Pot Holder
Directions: 
1. Preheat the oven according to the biscuit package.  My package was 425 degrees F.
2. Cut each biscuit into fours using your cutting board and knife!
 3. Spread out the cut up biscuits into the 9x13 pan.


4. Put the biscuits into the pain and cook them about half the recommend time on the package.  They should come out of the oven looking like the ones in the picture right above here.

5. While the biscuits are in the oven cut up all your veggies and meat with your knife and cutting board.  Get all other ingredients ready too! 
6. Once you pull the biscuits out of the oven using a pot holder, you can add your sauce!  Spread the sauce around using a Table spoon!  

7. Once you have the sauce on layer the rest of your toppings!

8. Then you add your desired amount of Mozzarella cheese!  Then pop it in the oven for about 10-15 minutes or until the cheese is fully melted!



9. TADA!  You have bubble Pizza!
10. Once it's cooled down enough for you, scoop it onto a plate and enjoy!

Chicken Fettuccine Alfredo!

 


My family and I are huge noodle and chicken eaters.  One of our favorite recipes is Chicken Fettuccine Alfredo!
Ingredients:
1 Package of chicken tenderloins (this can be optional if you just want Fettuccine Alfredo)
1 Package Cream Cheese
1/2 Cup of butter
1/2 Cup milk
3/4 Cup Parmesan shredded cheese
8 oz. Fettuccine noodles (we like it with spaghetti noodles)
3 TBS Olive oil 
Pepper to taste
Seasonings of choice
Water
Directions:
Take a large sauce pan and fill about half full with water and 1 TBS of olive oil bring to a boil.  While waiting for the water to boil. Put the other 2 TBS into a medium frying pan and add the chicken tenderloins, add seasons of choice to chicken (I use a little pepper, seasoning salt and garlic powder) and then cook over medium heat until chicken is done.
  Once water is boiling add the noodles (cook according to package).
  In a medium sauce pain add cream cheese, butter, milk, pepper and Parmesan cheese.  Cook on medium low heat stirring often. 
 Once noodles, chicken and sauce is done toss together and serve!  Goes great with garlic bread!  Once the chicken is cooked I normally cut it into smaller pieces before adding to the noodles and sauce but you don't have to!

Ingredients: 
1 Large egg per person
A splash of milk per egg
2 Tablespoons prepared Marinara Sauce per person
1 Whole-wheat English Muffin per person (split and toasted)
2 Tablespoons shredded cheese per person
2 Slices pepperoni per person (optional)

Preparation:
1). Preheat oven or toaster oven to broiler
2). Crack eggs into a medium bowl, add milk and stir.

 3.) Coat a small nonstick skillet with cooking spray and heat over medium-high heat.  Add egg and cook, stirring often, until set into soft curs.  1 or 2 minutes.
 

4.) Spread marinara sauce on English muffin halves.

5.)Top with the scrambled eggs, cheese and pepperoni (if using).

6.) Broil until the cheese is melted, 1 to 3 minutes. 
This is my son waiting for them to come out of the oven.  He loves helping make this recipe :)

Chicken Enchilada Bake

My family and I love chicken!  We are always looking for new recipes and I recently had a friend give me this recipe and it's a new favorite in our house!

Ingredients:
1 can of Cream of Chicken Soup
1/2 cup of Herdez Salsa Verde (or any green salsa)
8oz. of Sour Cream
2-3 Chicken Breasts ( or I used 2 or 3 large cans of canned chicken)
Mixed Cheese
Burrito Tortillas

Directions:
Preheat oven to 350 degrees











Cook chicken, if it's not already cooked.  Combine soup, sour cream, salsa and chicken in a medium bowl.  Tare apart the tortillas and do one thin layer in the bottom of a 9X13 pan, then do a layer of mixture, a layer of cheese and repeat one more time (tortilla, mixture, cheese).  Bake for 20 mins or tell warm and cheese is melted.

Let the Chicken enchilada Bake cool for a minute or two and then serve!

Flutternutter Sandwich Recipe!


Flutternutter Sandwiches go over huge in our house!  I know your probably asking what a Flutternutter sandwich is.  


Ingredients:
Butter
Peanut Butter (Desired amount)
Marshmallow Fluff (Desired amount)
Bread





Directions:
Spread butter on one side of each piece of bread (like you would with a grilled cheese).  Then put the peanut butter and marshmallow fluff on the other sides of the bread (the sides without butter).  Put together butter sides facing out and cook in a pan on the stove top over medium heat tell sandwich is golden brown!  

This is a great sandwich for kids and it's quick and easy to make.  My 3 year old and 5 year old love Flutternutter sandwiches!  You can serve with carrots  celery, cherry tomatoes, apple slices, orange slices or grapes!  Pretty much any fruit and/or veggie goes great with it!  My kids like carrots with it because they normally eat carrots with peanut butter anyway.


So the answer to what is a Flutternutter sandwich is that it's a peanut butter and marshmallow fluff grilled sandwich!

Stuffed Baked Potatoes! *Easy to Make, Cheap on the Wallet and Tasty!*

Stuffed Baked Potatoes!

Our Family loves baked potatoes!  After a while though a regular baked potato will not cut it!  Do you ever wish you could have just a baked potato for dinner?  Well I found the perfect answer!  It's easy to make, cheap on the wallet and is super tasty!

The ingredients you will need are:

4 Large Potatoes
2-1/2 cups of California-Blend vegetables
2 cups cubed fully cooked ham
1 can condensed cream of broccoli soup, undiluted
1/2 cup shredded cheddar cheese
Half of a small Onion (optional)
1/4 teaspoon garlic powder
1/4 teaspoon pepper
Butter (Optional)
Sour Cream (Optional)


My 3 year old son is all about helping out in the kitchen (and sneaking some of the food to eat).  If you have a kid that likes helping out in the kitchen this is a great dinner to make together!

Directions:

I normally start by cooking the California-Blend veggies in the microwave a little less time then the package recommends.  I let my son dump the veggies into the bowl and I allow him to add the water.  While the veggies are cooking I have my son help me put all the ingredients except the potatoes into a medium sauce pan.  Once the veggies are done have your little one add them to the sauce pan.  Next, since the stove is going to be hot I move my little man over to the sink and let him wash the potatoes while I stir the veggie mixture.  The veggie mixture is done when the cheese is melted and it starts to bubble (normally about the same time the potatoes are done).  
Once the potatoes are washed I have my son place them in the microwave and I turn it on.  Cook the potatoes tell they are done (4 large potatoes take about 12-14 minutes).  Cut an X in each potato add a little butter, the veggie mixture and a dollop of sour cream. ENJOY! 

From my own personal opinion my kids love eating food even more when they help make it!  It is a great way to introduce new foods to your kids!  My kids are not picky eaters but it's never to early for kids to start learning how to help and be safe in a kitchen! I can tell you my son feels such pride when he helps make dinner.  Instead of telling you though, i'll just show you!
Tell me he doesn't look super happy about his creation ;)  Like the old saying says 
"A picture is worth a thousand words."
